Carb Diet Low Meal Plan

Planning is crucial when you attempt a carb diet low meal plan. You simply cannot stay on the diet unless you create a meal plan for each week. After you have made your meal plan, create a grocery list, grocery shop, and prepare your food ahead of time as much as possible. Since dinner time seems to be the most hectic, here are some low carb recipes that will help you because they can be eaten for several days at a time.

Low Carb Chicken Salad Recipe

Chicken Salad

12 grilled chicken breasts (look at low carb chicken recipe for details)
4 cups light mayonaise
1 1/2 teaspoon dijon mustard
1/4 cup dill weed
1 cup pecan pieces.

Grill chicken. I often use grilled chicken that I have already cooked, frozen, and thawed. Dice into medium sized pieces. This is a chunky chicken salad. Mix all other ingredients together. Add chicken and mix again.

This makes a huge amount of chicken salad. It lasts for quite a while or you could use this for a party dish. My family loves this chicken salad. I hope yours will too

Low Carb Veggies

Julienne 2 large Zucchini
Julienne 3 yellow squash

Saute in 2 T olive oil until the mix is cooked the way you like it. I am Southern so I cook mine pretty done and limp. We don’t like our vegetables too crisp.

Use a mandolin or a food processor. If you are better than I am with a knife, you might cut the strips youself. This makes such a pretty and quick side dish. I never really liked either vegetable until I tried this method. Enjoy

Low Carb Shrimp Salad

1 pound of shrimp, boiled and cut into pieces
1/3 cup light mayo
1/4 cup dill pickles, cut into small pieces
4 boiled eggs, chopped
1/3 cup Low Carb cocktail sauce
Mix mayo and cocktail sauce together.

Pour over other ingredients and mix. This is great without crackers or if you want to live on the wild side, serve with a few whole wheat crackers

I think you get the idea. If you cook ahead of time and your meal is ready when you walk in the door, you will not be tempted to eat out or buy take out. Planning is everything.
