Low Carb Sausage Muffins Recipe

1/2 pound low fat turkey sausage
1/2 cup onion — chopped
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
12 eggs. I like to use Cage Free, Hormone Free, and Antibiotic Free.
1/4 teaspoon freshly ground pepper
1/2 cup shredded light cheddar cheese

In a skillet brown the sausage and drain well.

In a bowl, beat the eggs. Add onion, green pepper, salt, pepper, and garlic powder. Stir in the sausage and cheese. Spoon by 1/3 cupfuls into greased muffin cups. Bake at 350°F for 20-25 minutes.

Scallops

I really love scallops for their fresh sweet flavor. I do as little to them as possible so as not to mask their delicious taste.

Heat pan with 2 Tablespoons Enova oil. Use my Seafood Seasoning as a rub for the scallops. Put in hot pan and sear on both sides. Do not overcook. If you are not sure if they are done all the way through, cut into one. Serve hot.

Quick Entree

Look at your grocery’s seafood counter. I bought a pound of already cooked, deveined, and pealed shrimp. All I had to do was pay and go. They were ready to serve when I got home.

Another easy way to do shrimp is to have your seafood market steam your shrimp. Serve hot or cold.

I added a couple of salads and fresh peaches and we had a wonderful cold, low carb feast. Low carb lifestyle doesn’t have to be difficult. If you make it too hard, you won’t stay on the lifestyle. Cut every corner you can

Mc Donald’s Fruit Salad

I ordered the fruit salad today to take home for supper. The $3.00 price is a bit high for the little bowl of apples and grapes but what the heck, I like to try new things. Anyway, I decided to make a little fruit salad and this is what I did.

Cut the apples into bite sized pieces and put in a small bowl. Throw away the sugar coated walnuts. What were they thinking? Add grapes. Pour yogurt over fruit and stir. I don’t know what is in the yogurt but it is fabulous. I am probably better off not knowing, but it’s very tiny so maybe it’s ok. This makes a very refreshing change-of-pace salad. Enjoy

I hope you will try these recipes. They have certainly helped me in my low carb lifestyle.
